also known as alligator pepper. The spice that was known to Chaucer (1366) as Greyn de Parys is Aframomum melegueta. The small black seeds
are available in the larger health food stores in Houston as "grains of paradise." I have never been able to persuade them to germinate, but
I enjoy grinding them onto fried or scrambled eggs.

LIGHT PREFERENCE: NOTES: Le Jardin Ombragé - This plant was purchased locally and identified only as "cardamom". It is about 12-18 inches tall and has the
same fragrance to the leaves as A. nutans. I have divided it and made a mass planting in light shade to test its usefulness as a ground
cover. Foliage did not freeze back until temperatures dropped to the mid twenties. I have kept it outside over winter.
TAXONOMY NOTES BY BRIAN MIDDLEDITCH -
A species named Amomum compactum has been known for eons. Bontius
misidentified it as Cardamomum minus in 1658, and it was first described formally (as Amomum compactum) by William Maton in 1811. Its common
name is round cardamom. However, the taxonomic status of the various cardamoms was in a constant state of flux during the 18th and 19th
centuries - and the literature on these species is still somewhat murky. The cardamom in your pantry is definitely Elettaria cardamomum.
Amomum compactum [Sol ex] Maton: This is neither Alpinia nutans (L.) Roscoe nor Alpinia nutans Schumann (which is now Alpinia oceanica
Burkill). Commonly known as Javan cardamom.

TAXONOMY NOTES BY BRIAN MIDDLEDITCH - Amomum meleguetta: now known as Aframomum meleguetta Schumann, the "grains of paradise" that are
available in health-food stores. Your other synonyms are correct, and the seeds are also known as alligator pepper. The spice that was
known to Chaucer (1366) as Greyn de Parys is Aframomum melegueta. The small black seeds are available in the larger health food stores in
Houston as "grains of paradise." I have never been able to persuade them to germinate, but I enjoy grinding them onto fried or scrambled
eggs.

The grains of paradise have been an important spice in 15.th century Europe, when spices were high in demand, but the sea route to India has
not yet been discovered. In these times, grains of paradise were a common substitute for black pepper. The West African coast got its name
"pepper coast" because the grains of paradise were traded there. Since then, the importance of this spice has vanished to quite zero in our
days; outside its production area (Central Africa), it is only known in Northern Africa and may appear in Moroccan spice mixtures (see cubeb

Apart from Morocco, grains of paradise are also popular in neighbouring Tunisia.
Tunisian stews are frequently flavoured with an aromatic mixture called gƒlat dagga, which contains grains of paradise besides black pepper
and several sweet spices: cloves, cinnamon and nutmeg. Combining peppery pungency and rich aroma, this mixture is a good example of Arab
cooking tradition.
In the West, grains of paradise are now hard to obtain, but still valuable for people
following old recipes (e.g., for sausages or aromatized wine). But this spice are a
worthy addition to many other everyday dishes. Its pungency is not as strong as pepper, but more subtle and goes well with vegetables
(potatoes, aubergines, pumpkin). To obtain best results, grains of paradise must be ground before use and should be added shortly before
serving. Despite their rather pungent taste when tried alone, they must be used liberally to obtain satisfactory results.

Black cardamom is, in most books, described as an inferior substitute to green cardamom, but this is simply untrue. In India, black cardamom
has its special field of application, and although green and black cardamoms are frequently interchangeable, the black variety is felt
superior for spicy and rustic dishes, while green cardamom is much preferred by the Imperial (Mughal) cuisine with its subtle blend of sweet
fragrances.
Black cardamom can be used in rather liberal amounts, up to a few capsules per
person. The smoky fragrance of the pure spice is not discernible in the finished dish; black cardamom cannot dominate a dish, but enhances and
intensifies the taste of other ingredients. The pods should be slightly crushed before usage, but not so much that the seeds are released;
you may remove them before serving (though I do not), but if you don't, be sure to warn your guests about dark, woody and, hmmm, intensive
tasting objects in the sauce.
Black cardamom, as other spices used in Northern India, needs some time to develop its aroma best. This behaviour is shared by other unground
spices, like cinnamon, cloves and green cardamom, all of which are popular in Northern India and mostly used unground (see also onion). Thus,
it is generally a good idea to prepare Northern Indian dishes of braising type (kormas) a few hours or even one day in advance.
Although there are many distinct species of black cardamom, ranging in pod size from 2 cm (A. subulatum, Nepal to North Vietnam) to more than
5 cm (A. medium, China), their tastes do not differ much. Apart from usage in Indian (and Nepali) cuisine, they are not much known, but have
some regional importance in Southern China. There, the ground seeds are an optional ingredient to the five spice powder (see star anis).

dormant. You already mentioned Curcuma, Kaempferia amd Siphonochilis and Hedychium. Most of the tribe Hedychieae goes dormant.
Scaphochlamys can be forced into dormancy. I haven't grown Paracautleya and Parakaempferia, but believe they also go dormant."

From: Dr.Abdul Ghani Hussain MBChB., CTM - Boesnbergia curtsii. These big leaves Boesenbergia is seen sprouting
when the rain starts falling in April. They are found only on Limestone hills. Thus they are seen more on the islands which are made up of
limestones. They seem to be concentrated in areas that are moist and under heavy shade. The North-eastern region of Langkawi Island is
basically limestone and so are the islands along the Northeastern, eastern and southeastern shores of Langkawi. (if you are at a lost you can
visit my site on Langkawi at http://langkawi-beaches.hypermart.net and http://99-islands.hypermart.net ). I have transferred some into pots
and are growing well under heavy shade and very moist soil. The rhizome is very fragrant. May have medicinal values but research must be done

'The upper surfaces of the leaves of B. ornata are beautifully marked by an irregular silver band on either side of the midrib; on the

at the end of the book "The Orchid Thief" by Susan Orlean. In the book, the main character is asked what his favorite plant is. The
interviewer and author naturally expects him to name some beautifully ornate orchid. Instead, he says 'Boesenbergia ornata'. He also mentions
that he sold the plant, but also sent a cutting to Kew Gardens, England. I have never seen it offered or listed for sale. It must be a
very,very beautiful ginger to compete with orchids in beauty!

tropical perennial growing to 50 - 70cm high. Leaves die back in frost. It is the fat swollen roots hat are sought after in this species and
not the rhizome. The succulent roots are used to flavour many kinds of food either added raw or cooked. They are also sold in a pickled form
in Indonesia & Thailand. Young leaves & shoots are also eaten. Roots currently getting very good prices in Asian grocers in Sydney.

rhizomes but no known medicinal values.

Gardens, Edinburgh) opted for Merrill's citation, and I tend to agree with her. She also described a var. attenuata.

TOM WOOD - MAROON KEYS-(Boesenbergia rotunda)-This is an ornamental form of the spice plant this is known as Chinese Keys. It grows to
30" tall in deep shade and the broad, upright leaves are grey-green on one surface and maroon underneath. It's hardy to zone 7 and has small,
tubular flowers with red spots on the lip.

B.pandurata.This is a spice the Thais use a lot in their cooking and has medicinal values too. It is however not native to the region. Came

Univ. of Connecticut Botanical Garden - B. horsefieldii is a perennial herb native to Java. This plant has long narrow leaves that can be
up to a foot long. The bracts are in clusters of two to four and are white to a creamy white.

CAUTLEYA Royle Ill. Bot. Himal. 361 (1839) : Joseph Hooker (son of William Hooker - they were both curators at Kew) used the spelling
Cautleya in his "Flora of British India" in 1890, but the genus was previously named Cautlea by Royle in 1839.

BOTANY.COMDESCRIPTION: This plant grows up to 2 feet high with a spread of 20 inches. It
is an upright plant with large, lance-shaped, shiny green leaves on reed-like stems. The funnel-shaped, pale orange or yellow flowers are
surrounded by maroon-purple bracts and are produced in erect spikes above the leaves in late summer and early fall. This plant is originally
found in the Himalayas. POTTING: Cautleyas should be grown in deep, fertile, moist soil in full sun. It should have shelter from cold, dry
winds. PROPAGATION: Increase your plants by division or seeds in the spring.

Native to northern India, where they are known locally as jangli adua. The
genus was named after Sir Proby Thomas Cautley (1802-1871), a British
military engineer who served in India. The incorrect spellings Cautlaya and
Cautlea have often been used (these errors just get perpetuated by people who copy them). But do not confuse with Cattleya, an orchid genus.

new genus of Zingiberaceae from Thailand. Natural History Bulletin of the Siam Society. 45(2):217-221. Derek says "I think that John Banta
was the person who brought it in, and it is in tissue culture with Agri-Starts IV in Apopka, Florida."

NOTES: Le Jardin Ombragé - I received a small rhizome on trade in the fall of 1998. It has been very slow to increase, and did not break
dormancy this year until mid May. This summer I acquired a gallon pot of it and moved it to an area with filtered shade and loose organic
soil. Has not bloomed yet this year. Discussion on the zingiber list confirms that this plant is slow to increase. Left it outside this
winter, and will be a good test of hardiness as temps have dropped to low twenties.
STOKES TROPICALS - fantastic low growing shade plant prev. classified as Kaempferia, recently renamed to new genus. Outstanding patterned
leaf with dark maroon markings on a green leaf. Underside of leaf lightly washed with maroon. Fiery orange/gold flowers emerge for weeks
from the leaf axils. As beautiful as flowers are the foliage is enough reason to grow. Collected from the jungle in southeast Asia. Full
shade, goes dormant in winter, prob zone 9 and higher.

anyone come across the actual plants: C. longipetiolata (New Plantsman

dormant. You already mentioned Curcuma, Kaempferia amd Siphonochilis and Hedychium. Most of the tribe Hedychieae goes dormant.
Scaphochlamys can be forced into dormancy. I haven't grown Paracautleya and Parakaempferia, but believe they also go dormant."

Curcumorpha banglium: As far as I am aware, there is only one species of Curcumorphia: Curcumorphia longiflora (Wallich) A. Rao & Verma. This
species was formerly known as Banglium sulphureum Buch.-Ham. ex Wallich. I am not
familiar with the designation Curcumorpha banglium.
